Pandan Ginger Muffin (Recipe from Chef Dato’ Fazley Yaakob)

Muffin Pandan Halia oleh Chef Dato' Fazley Yaakob

Ingredients:
190g flour
70g VHalia
2 eggs
1 ½ teaspoon baking powder
1 ½ teaspoon baking soda
60g castor sugar
60g brown sugar
200ml coconut milk
100ml vegetable oil
1 teaspoon pandan essence
1 sudu kecil perisa pandan
Almond flakes
Methods:
- Preheat oven to 180c.
- Mix all the dry ingredients in a mixing bowl until even.
- Mix all the wet ingredients in a separate mixing bowl.
- Mix both bowls together until even.
- Pour the batter into the muffin cup sprinkle some almond flakes on it.
- Bake the muffins for 15 minutes or until they are cooked in the oven at 180c.
